Mindful Chef: Healthy Fast Food.

​One thing I always struggle with is finding the time to cook healthy, homemade meals in the evening. By the time I have got home from work and then spent a while on my blog, I just want something quick and simple. I always end up going for same thing day in & out. Chicken & Rice… which trust me gets boring after a while. I was really excited to hear about Mindful Chef as it sounded like the perfect alternative for me and also a great way for me to try some new recipes and get some healthy meal ideas at the same time!

​The lovely team at Mindful Chef kindly send me a box with 2 nights worth of meals in for me to try, one being a Thai Red Curry and the Other a Healthy take on a burger using a Mushroom as the bun  & avocado as the relish.
​
The box arrived so nicely packed with each meal ingredients in 2 separate paper bags depending on what recipe they were for. I love how fresh the food arrived, and how the ingredients are organic. Its nice to actually know exactly what is going into your food.  The boxes contain the exact amount of ingredients needed to create your meal, which means you don’t have to waste time measuring anything, you can simply chop it up & whack it in!! 

Both meals took me around 30 minutes to make, and the super clear, easy to read recipe cards made each step so simple for me to do. I would say I am an average cook at best and I understood and was able to prepare everything perfectly with no problems. 
The meals went down like an absolute treat! The Mushroom burger is now an official staple in our house, and I have made it at least 3 times again since receiving my box. I love the idea of the mushroom base, as you still feel like you are having a cheat meal but with half the calories! The carrot fries were surprisingly good to (I Don’t even like carrots!!) and I finished every last one. The Thai red curry was also honestly one of the nicest Thai Curry’s I have ever had, in fact my mouth is actually watering right now as I type. 
The final and best part about the Mindful Chef boxes are that you actually feel like you have achieved something after cooking, I was proud of myself to say I had made something from scratch, that was so so delicious & so so healthy!
